Two yolk egg! Making Blondies and recipe calls for three eggs. Third egg cracked yielded two yolks so I’ll be setting aside one for something else…
(I wish I cracked that one first!)

Sandwich assemble!
two slices homemade bread, lightly toasted
half large tomato, sliced and sprinkled with vinegar
half cup shredded iceberg lettuce
1 hard boiled egg, sliced
1/4 cup coriander leaves,  stems trimmed and well washed
1 Tbsp nonfat Greek yoghurt
1 medium jalapeno pepper, frozen and then thinly sliced
1/2 tsp granulated garlic
1/2 tsp ground pepper

  • 1/4 cup coriander leaves,  stems trimmed and well washed
  • 1 Tbsp nonfat Greek yoghurt
  • 1 medium jalapeno pepper, frozen and then thinly sliced
  • 1/2 tsp granulated garlic
  • 1/2 tsp ground pepper

Lunch! Fried egg (seasoned with a half tsp total of pepper, garlic powder, chili flakes), shredded cheddar, and sautéed red pepper strips on a toasted whole wheat bagel.  Didn’t need salt since cheese usually has enough, and the peppers were seasoned by whatever was left from cooking the egg.  Simple enough.
