Sandwich assemble!
two slices homemade bread, lightly toasted
half large tomato, sliced and sprinkled with vinegar
half cup shredded iceberg lettuce
1 hard boiled egg, sliced
1/4 cup coriander leaves,  stems trimmed and well washed
1 Tbsp nonfat Greek yoghurt
1 medium jalapeno pepper, frozen and then thinly sliced
1/2 tsp granulated garlic
1/2 tsp ground pepper

A Caesar salad of sorts
2+ cups mixed greens
2 Tbsp honey mustard
handful croutons
1 Tbsp shredded Parmesan
1 serving..or 2…
I had used the croutons and honey mustard dressing I made in the previous posts. I kept adding more greens to enjoy the salad longer. An extra serving or two of lettuce has never hurt anyone haha

Croutons!
They were featured in my Caesar salad last summer. Here’s a simple and garlicy version of them.
What I used: 
toaster oven & knife
one thick slice of bread
butter spray (like “I Can’t Believe it’s Not Butter”)
teaspoon granulated garlic
What I did: 
cut bread into cubes
sprayed baking sheet and cubes with butter spray
toasted on low setting (apx 200F) for 15min
sprinkled granulated garlic and let cool
They should be crunchy through and through, not chewy inside. Perfect atop any salad!

Croutons!

They were featured in my Caesar salad last summer. Here’s a simple and garlicy version of them.

Reblogging my own post because I made another two loaves with Splenda (don’t ask, I just use what my mother stocks in the kitchen). It didn’t come out too dense like the other things I’ve baked with the sugar substitute, so it’s definitely a go if you want a low sugar version of this cake-y bread. Enjoy!

Refreshing Roll Dough
Makes 18 rolls 

Ingredients

  • 1 egg plus water to equal 1 1/2 cups, warmed to 80F/27C
  • 1/3 cup butter
  • 1/2 cup brown sugar
  • 1 1/2 tsp salt
  • 4 1/2 cups all-purpose flour
  • 2 tsp active dry yeast

Eggwash

  • one egg, well beaten
  • 1 Tbsp water

METHOD(S)

  1. Make the dough! Click here for a decent video describing how to hand knead dough. Since I bake pretty often I actually used a bread machine for the mixing and kneading…
  2. Pre-heat oven to 350F/177C
  3. After you’ve got a slightly sticky dough at hand, flour your hands and work surface and cut the dough into two then each half into nine pieces. Click here for the technique I use to shape the rolls. Try not to use too much flour otherwise the rolls will get too dry and won’t be as fluffy.
  4. Place rolls smooth side up in greased baking sheet, spray tops with non-stick spray and cover (I use cling wrap). Wait 30 minutes until they rise and double in size.
  5. Uncover and brush with eggwash. Bake for 20-30 minutes or until golden brown.
  6. Serve warm!
