Ingredients:
-3cups semi-sweet or milk chocolate chips
Filling:
2cups smooth peanut butter  
1cup confectioner’s/powdered sugar 
1 tsp vanilla essence or vanillin 
How-to
Melt chocolate in double boiler. Keep the stove burner on low to prevent the chocolate from hardening. Leave a soup-spoon in it to mix and transfer chocolate 
Mix ingredients for the filling in a separate bowl 
Line a muffin tray with cupcake liners 
dollop about a tablespoon’s worth of melted chocolate into a cupcake liner 
Using a small spoon, spread the chocolate around the base and halfway up the sides of the liner.  This part can be frustrating and messy, but don’t give up!
using clean hands take about a tablespoon of the filling and shape into a ball and flatten it. It should look like it would fit into the chocolate-lined-cupcake-liner
place another spoon of melted chocolate on top and swirl until peanut butter filling is covered 
repeat until you’ve used all the chocolate and filling 
stick the tray in the freezer to harden for at least ten minutes 
after they’re solid, you can either eat them or store them in the fridge for future enjoyment. When biting into one, they should look like this:
