Cajun salad for dinner and tomorrow’s lunch 
1 6 1/2 oz can of tuna packed in water, drained
5 oz (or half a can) of whole kernel corn, cooked
1 large tomato, chopped
1/4 cup copped red onion
Mix all ingredients in large bowl, chill and serve in bowl lined with salad greens.
Dressing
1 Tbsp vegetable oil
1 Tbsp cider vinegar
1 Tbsp dried parsley
1/4 tsp salt
1/2 tsp dried basil
1/2 tsp chilli powder or red chili flakes
Makes 2-3 servings
